Step 1: Soak dried mushrooms in warm water for 2 hours.
Step 2: Cut the chicken into pieces, stir with sake and salt, and marinate for 20 minutes.
Step 3: Cut the pumpkin into small pieces.
Step 4: After the mushrooms are squeezed dry, remove the stems and cut into shreds.
Step 5: Scrape off the skin of the burdock with a knife, cut the burdock into shreds and soak in water for later use.
Step 6: Saute minced garlic until fragrant, stir-fry pumpkin, shredded burdock and mushroom until fragrant, then add chicken and fry until discolored.
Step 7: Turn to low heat, add sake, mirin, sugar, soy sauce and fry for a while, then turn off the heat.
Step 8: Wash the white rice.
Step 9: Add oatmeal rice, white rice, mushroom water, water, and ½ teaspoon salt to the rice cooker (a little less water than normal.), then add the fried ingredients and cook until the rice is cooked.
Step 10: After the rice is cooked, stir it from bottom to top and it’s done.
