Rice in Winter Melon Soup

Ingredients:

  • Winter melon: 300 g

  • Loofah: 1/3 stick

  • Pork: 40 g

  • Straw mushroom: 5

  • Shrimp: 3

  • Scallop: 1

  • Chicken broth: 400 ml

  • Water: 100 ml

  • Rice: 1 bowl

  • Salt (for marinating pork): 1/2 teaspoon

  • Tapioca powder (for washing shrimp): Moderate amount

How To Cook:

Step 1: Peel and dice the winter melon and loofah, and cut the straw mushrooms in half.

Step 2: Dice the pork, marinate with salt and sugar for 10 minutes. Remove the intestine of shrimps, rub with tapioca powder, rinse with water and drain, add sugar and put in the refrigerator to marinate for 10 minutes. Soak scallops in hot water until they become soft. Reserve the water used for soaking the scallops.

Step 3: Add broth, water, and water used for soaking scallops into a pot to boil.

Step 4: Add in diced winter melon, shredded scallops, and diced pork and cook upon medium heat for 10 minutes.

Step 5: Add diced loofah and diced straw mushroom into the pot and cook for 5 minutes.

Step 6: Serve the warm rice in a soup bowl.

Step 7: Add shrimp into the soup and cook for 30 seconds until cooked.

Step 8: Pour the soup into the soup bowl and it is done.
